Consider Bardwell Farm – “Straddling the rolling hills of Vermont’s Champlain Valley and easternmost Washington County, New York, 300-acre Consider Bardwell Farm was the first cheese making co-op in Vermont, founded in 1864 by Consider Stebbins Bardwell himself. A Century later, Angela Miller, Russell Glover, Chris Gray, and cheesemaker Peter Dixon, are revitalizing the farm and its traditions. The cheeses are made with goat’s milk from our herd of 100 Oberhaslis and cow’s milk from Lisa Kaimen’s herd of 20 Jerseys. Rotational grazing on organic pastures produces the sweetest milk and the tastiest cheese. Everything here is made by hand in small batches. We use only all natural ingredients and whole, fresh milk that is antibiotic and hormone free.” We pick up cheese every week from Bardwell farm at the McCarren park green market in greenpoint. |
